4 Slices of White Bread
3 Rashers of Bacon, Chopped
1 Cos Lettuce
1 Punnet of Cherry Tomatoes, halved
4 Boiled Eggs
50g Parmesan Shavings, plus extra to serve
2-4 Anchovies (optional)
2 Tablespoons of Lemon Juice
1 Clove Garlic, crushed
½ Cup of Olive Oil
- Preheat the oven to moderately hot 190°C (375°F/Gas 5). Spread the bread cubes on a baking tray and bake for 15 minutes, or until golden.
- Cook the bacon over medium heat until it is crisp. Drain on paper towels.
- Tear the lettuce leaves into pieces and put in a serving bowl with the bread cubes, bacon and parmesan.
- To make the dressing, process the anchovies, egg, lemon juice and garlic in a food processor for 20 seconds, or until smooth. With the motor running, add the oil in a thin stream until the dressing is thick and creamy. Drizzle over the salad, sprinkle with the extra parmesan and serve immediately.
